Thanksgiving Leftovers

Well, Thanksgiving is over and the weekend has come and gone.  But, the food has not.  There are still plenty of leftovers to be enjoyed.  With a fridge full of stuffing, wild rice, collard greens, and turkey, I see different variations of sandwiches and soups in my future.  And what do I want to drink with my left overs?  A delicious Chateauneuf-du-Pape sounds perfect!

I chose the 2012 Domaine Mathieu Chateauneuf-du-Pape for a number of reasons.  This wonderful french wine is soft and light bodied so it is ideal for a fresh soup and salad/sandwich combo.  It, also, has the perfect amount of red berry fruit (raspberry and cherry) that will pair up nicely with the turkey, rice, and mushroom-filled stuffing.
